- Non-Food Contact Surfaces
Observation: The nonfood contact surface of the fan guard in grill side cooler, condensate drip pand and drip tube has accumulations of grime and debris.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents. Replace condensate drain tube. (once per month shold be adequate)
- Handwashing Lavatory, Water Temperature, and Flow
Observation: Water from the handwashing sink at front prep area was measured at a temperature less than 100°F. (no hot water)
Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.

Observation: Raw foods of animal origin (ground beef)stored over ready-to-eat (RTE) food in the reach in cooler refrigeration unit.
Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
- Food Storage Containers - Identified with Common Name of Food (corrected on site)
Observation: Unlabeled food containers. (salt, sugar, ground pepper)
Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.

Note: A follow up was done to ensure repair or replacement of the prep cooler that has had consistent problems holding temperature. At time of this inspection, the cooler was 38 degrees and appeared to be working correctly. According to manager, logs indicate that the cooler has been operating consistently at 41 or lower for the past several weeks. They will continue to record temps on this equipment daily to ensure it continues to hold temperature. No violation noted during this evaluation. | 03/06/2013 | Follow-up | |
Note: This cooler has been in violation for the past three inspections. It is in disrepair does not seem to be capable of consistently keeping food at proper temperatures to prohibit bacteria growth. Multiple repairs have been attempted to bring this equipment into compliance but none have been long lasting. This cooler must be repaired (if possible) or replaced immediately. A follow up will be made in 15 days of receipt of this report.

Observation: Items stored in the prep cooler next to grill cold holding at improper temperatures
Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.

Notes: New store manager - Amy Kasdan. She will be getting her food safety certification in Feb, 2013. Chad has been promoted to district manager and is currently training Amy. Received a copy of the Waffle House Disease Prevention Awareness policy. EHS gave PIC a copy of an approved Employee Health Policy that states the Big 5 FBI that must be reported to the local HD and encouraged him to implement this along with the current policy in place. Some general cleaning under dish machine is needed and all cleaning equipment(mops/brooms/etc) should be hung up and kept at least 6 inches off the floor. The prep cooler next to the grill has been a critical violation for the past 3 inspection. This unit needs to be repaired properly or replaced immediately! A follow up inspection will be necessary.
