Spoke with Ashley about availibilty of food safety classes in the area, with local VPI&SU Food Safety Extension agent.
Person in Charge Observation: Employees are not properly trained in food safety as it relates to their assigned duties.
Correction: Train all employees in food safety as it relates to their assigned duties.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: gcream cheese and dairy butter individual servin packets cold holding at improper temperatures
Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.

Critical: Person in Charge - Assignment of Responsibility* Observation: A food safety-trained person in charge was not available at the time of inspection.
Correction: The permit holder shall designate a person in charge who is authorized to monitor and manage all food establishment operations and who is authorized to take actions to ensure that the Regulations' objectives are fulfilled. Food Safety Education training is required under the FDA Food Code and the VDH Food SAfety Regulations.
Food Storage - Clean and Dry Location Observation: Food stored on the floor or food stored less than 6" above the floor.;Elevate food storage onto approved shelving with minimum 6" legs or casters.
Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* Observation: According to the ""consume by"" date on the commercially processed milk in the refrigerator, the food should have been discarded three ago.
Correction: Discard the food at this time and ensure all commercially processed RTE food is served, sold or discarded by the ""consume by"" date after opening. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Mops - Drying Mops Observation: Mops not hung up to air dry.
Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
Critical: Toxics - Common Name/working Containers of Toxics* (corrected on site) Observation: Working containers (spray bottle of cleaning product) was not properly labeled.
Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.
