    Observation: Some equipment noted in need of cleaning. (dust on hot holding lamps and on top of other equipment.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

-Finishing painting wood surfaces in the kitchen.
- Met with the Building Dept and discussed hood systems and ansul systems for fryers, ovens, and other cooking equipment.

- Finish stocking hand sink with soap and hand towels.
- Thermometer that read 0 to 220 degrees must be provided
- Fax water test to the office (540) 722-3479 (No water served, all bottled)
- Provide food service gloves for handling ready to eat foods.
- Schenks providing food.
- The hot-dogs served are boiled.
- A griddle and fryer are present and need to be addressed with the Building Department and Fire Marshal. Currently there is no hood system or Fire suppression system for either kitchen. These items were present when Mr. Gunter took over the Winchester Speedway. The health department is unsure when they were added and not addressed for these issues prior.
- An updated equipment list, menu, and food supplier list is needed for the file.
*** The kitchen under the grandstands has not been fully inspected and is not permitted to serve food at this time. The broken glass on the freezer unit will need addressed, along with any issued found at future inspection

    Observation: The (faucet/fixture) at the 3 vat sink is to short to fill all three vats of the sink.
    Correction: Repair or replace the faucet so that it can fill all three vats in the sink.
  • Handwashing Lavatory, Water Temperature, and Flow
    Observation: Water from the handwashing sink at pit area kitchen was measured at a temperature less than 100°F.
    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.
  • Plumbing System Maintained in Good Repair
    Observation: The sink basin at the grand stand kitchen is slow to drain.
    Correction: Plumbing systems and components shall be maintained in good repair.
  • Light Bulbs Protective Shielding
    Observation: Light bulb in pit side kitchen not shielded, coated, or otherwise shatter-resistant.
    Correction: Shield or replace light bulb with a coated or shatter-resistant bulb.
