  • Equipment - Cutting Surfaces
    Observation: The white, red, and green cutting boards stored on the prep table are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

The above observations and the following were discussed with the person in charge:
-Handles on the pizza cutters observed in disrepair, PIC has 2 pizza cutters on order.
-Observed the rinse gauge on the dishmachine to measure at 178'F maximum. Surface temperature reads above 165'F. Dishmachine rinse is getting above 180'F but not showing this on the dishmachine temperature gauge. Rinse gauge may need to be adjusted to show the max temp at above 180'F.
-Quaternary ammonium 146 sanitizer in the 3 compartment sink measured at 200 ppm.
Observed excellent handwashing and thawing procedures in the facility during this inspection, great job!

  • Equipment - Good Repair and Proper Adjustment (corrected on site)
    Observation: Mechanically vented hood filters not in good repair or have gaps in between filters. Observed the hood vents stored on top of the oven. The PIC replaced the hood vents during the inspection.
    Correction: Repair or replace hood filters and/or eliminate gaps between filters.
  • Warewashing Equipment, Cleaning Frequency
    Observation: The interior surfaces of the mechanical warewashing machine are soiled with (food debris, limescale) that may decrease the effectiveness of the unit.
    Correction: Increase the frequency of cleaning or limescale deposit removal from the interior surfaces of the unit to maintain unit performance.

The above observations and the following were discussed with the person in charge:
-Please clean the interior of the drawer holding the spoons across from the large oven.
-Ensure no cans or utensils are being rinsed in the handsinks.
The quaternary ammonium 146 sanitizer in the 3 compartment sink and in the sanitizer buckets was measured at 200 ppm.
The kitchen and equipment were observed to be very clean, great job by all staff members!

  • Handwashing Lavatory, Water Temperature, and Flow
    Observation: The handwashing sink next to the warewashing area has very little water pressure and the water was observed to be discolored. The PIC placed the handsink out of service during the inspection and put in a work order to have the sink repaired.
    Correction: Repair/replace the handsink and provide a mixing valve or combination faucet capable of providing an adequate flow of water at 100°F and above.
