Label soap and sanitizer in the dispensing containers at the 3 compartment sink. Monitor the Delfield Reach-in, food items observed right at 41 degrees.

Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.
Critical: Food - Potentially Hazardous Food - Cold Holding* Observation: Sliced tomato doubled panned cold holding at improper temperatures in the prep table.
Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
Equipment, Utensils, Linens, and Single-Service and Single-Use Articles Observation: Items were found stored on the floor in dry storage.
Correction: Store items for the food facility in a clean, dry location where not exposed to splash, dust or other contamination at least 6 inches above the floor.
Physical Facilities - Cleaning Frequency and Restrictions Observation: Observed the expanded metal door leading to the dry storeage and walk-ins noted in need of cleaning. Also some storage shelves lined with cardboard.
Correction: Clean noted areas and remove cardboard liners that are not cleanable and can cause pest harborage conditions.

Risk Factor
- Hand sink in the back kitchen had the hot water turned off. The line is also hooked to the outside hose bib and a problem developed from it freezing. The outside hose bib should be valved out so that the hot water can stay on at the hand sink. No violation noted during this evaluation.

- The condensation line under the ice bin was leaking. It is being repaired by replacing the capillary tube with PVC pipe. - Provide chlorine test strips for the sanitizer used. No violation noted during this evaluation.
