    Observation: Backflow or backsiphonage prevention device not available on threaded faucet as required by law. Hose connected beneath handbasin in dishmachine area.
    Correction: Provide a backflow or backsiphonage prevention device on all threaded faucets. (double check valve for hose under pressure)

Grill fire resulted in fire suppresion system in mechanical ventilation hood releasing chemical. All food in grill area has been discarded and suppression system has been recharged. Grill will resume operations when clean up has been completed.

    Observation: The establishment uses the manual hot water sanitizing method, hot water immersion. The temperature of the water was less than 160 degrees Fahrenheit..
    Correction: The minimum temperature for manual hot water immersion sanitizing is 180-194ºF. Discontinue using this method until final rinse is maintained at the proper level. In the interim, move to chemical sanitizing method.

    Observation: Wiping cloth bucket improperly stored between use.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Equipment and Utensils - Good Repair and Calibration
    Observation: The water temperature gauge on the mechanical dishmachine is not in good repair and/ or not accurate in the range of use.
    Correction: Repair, replace, and/or maintain the calibration of gauges for accuracy and function in the intended range of use.
  • Critical: Backflow Prevention Device, When Required* (corrected on site)
    Observation: Observed the spray hose extend below the flood rim level of the kettle.
    Correction: Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.

    Observation: Cove molding and wall tiles are not maintained in good repair

    Observation: The nonfood contact surface of the hood system has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Mats in grill area not removable and easily cleanable.
    Correction: Design mats and duckboards to be removable and easily cleanable.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Wall behind cooking equipment noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Observation discussed and corrected during inspection. Dishmachine was converted to chemical sanitization of 100ppm chlorine due to the high temperature not reaching the required temperature. Discussed with CFM the repeat observations of the dishmachine not functioning properly. Recommended using chemical sanitizing all dishware. Observed facility in great sanitary condition!

    Observation: Due to improper operation of the mechanical warewashing machine, equipment food-contact surfaces and utensils are not sanitized after cleaning. (See 12 VAC 5-421-1680)
    Correction: Repair the unit so that achieving a utensil surface temperature of 160°F can be measured by an irreversible registering temperature indicator (e.g. thermolabel and maximum registering thermometer). Discontinue use of mechanical warewashing machine and convert to use of 3-vat sink wash, rinse and chemical sanitization. Use single-service items as deemed necessary if not capable of effective manual washing, rinsing, and sanitization of food-contact surfaces.

    Observation: A sanitizer test kit is not being used to ensure the chemical sanitizing solution(s) are at the proper concentration.

    Correction: Repair the unit to restore chemical sanitization. Verify the level of sanitizer and continually monitor by the use of test strips/kit.

    Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 25 parts per million when the pH is at 10 or less and the water temperature is at 120°F.
  • Mops - Drying Mops
    Observation: Mops not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
