No potentially hazardous foods were present in the lodge kitchen at the time of inspection. The lodge kitchen is only stocked with food during scheduled hunting trips at the facility.

Lodge kitchen is operational but is not stocked with unfrozen potentially hazardous foods until a registered event is planned. Kitchen appears clean and except for the high temp dishwashing machine rinse temperature, well maintained. Keep up the good work on your continual maintenance program.
  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures
    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 165ºF for a stationary rack single temperature machine. The thermometer read below 160ºF.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.

    Observation: Raw and/or undercooked prime rib, steak and eggs are provided on the menu without proper disclosure in that animal-derived foods are not asterisked to the footnoted disclosure statement.
    Correction: The Consumer Advisory shall include a disclosure statement that includes a description of the animal-derived foods and identification of the animal-derived foods by asterisking (*) them to a footnote that states that the items are served raw or undercooked, or contain raw or undercooked ingredients.
