Food is picked up monthly from Food Bank. Meals are prepackaged frozen from either Sun Meadow or Traditions. Meals consist of a meat and two vegetables. Meals are kept frozen until reheated and served immediately. Meals are reheated to 165 degrees from 9am - 12pm. PIC takes temp of meals before service. Log sheets observed for food temperatures. Beverages are water and tea. Food is reheated in a unit called a Macrowave which only prepackaged sealed containers are allowed. Heavy duty cord with direct wall connection observed for electrical source. Discussed glove use. Facility on public water. Services up to 15 seniors. Open Tuesday - Friday from 9am - 1pm.

Facility open Monday through Thursday, 8 a.m. - 1:30 p.m. Meals are delivered frozen, precooked and commercially packaged. Delivered Fridays by Senior Connections. Meals are reheated in microwave and immediately served in original container. PIC will slice sandwich bread and spread with margarine. Individual, commercial cups of fruit provided. Coffee, water and tea available. No juice or milk provided. No foods are held hot or held in reach in cooler. Meals are stored in chest freezer. Discussed handwashing and glove use. Gloves are available. Single service packaged utensils and cup are provided. Single service utensils stored in original plastic covering. Chlorine used as sanitizer and test strips are available. Hot Dogs are PIC's personal food. Hot Dogs: 41. Participants are allowed to bring snacks for personal use only.

03/26/2014Routine
A new 3 basin sink, prep table (stainless steel) and hot water system have been installed. Hot water is available at handsink, 3 basin sink and in restrooms. A new microwave has been added for reheating meals. Frozen, prepackage meals are delivered by Senior Connections and stored in chest freezer. Meals are reheated and immediately served. PIC stated that a new electrical breaker has been installed. Microwave and hot water heat under hand sink can be used at the same time. PIC and EHSS discussed future plans for the program. If more complicated food preparation is undertaken, the cafe will need future improvements. It is recommended for future consideration that a separate cafe area be created by installing walls and a door to separate the kitchen from the dining and multipurpose areas from the food preparation area.

Facility is open 8 a.m. - 1:30 p.m., Monday - Thursday. Lunch is served at approximately 12 p.m. Packaged, frozen individual meals (Healthy Choice) are reheated to 165 degrees and served immediately. Meals purchased at Walmart and stored in chest freezer. Milk is purchased from Walmart and dispensed in single service cups. All utensils are single service. Discussed hand washing and glove use. Recommend using single use paper towels for cleaning nonfood contact surfaces. Recommend using cutting board to prepare buttered bread. There is no 2 or 3 basin sink in the facility. EHSS discussed how cleaning and sanitizing is done for minimal equipment such as coffee pot, tea maker, knifes for buttering bread. Manager stated that 3 bins are set up for this process. Chlorine and test strips are available. EHSS will discuss with Parks and Recreation the need for the continuous availability of hot water and the handsinks in the food preparation area and restrooms. EHSS did observed the microwave cutting off when hot water heater under the handsink in the kitchen was turned on. EHSS observed no 3 basin sink in the food preparation area. EHSS will discuss need for 3 basin sink to properly clean and sanitize equipment. Until 3 basin sink is installed, no food preparation other than reheating individually packaged frozen meals may done.

    Observation: There is not a sufficient hot water supply to meet the demands of the facility. There is no hot water supplied to the restrooms in the facility. There are no hot water lines connected to the handsinks in the restrooms used by the staff preparing food or the participants in the program.
    Correction: Recommend ensuring that hot water is adequate to meet the demands of the establishment.
  • Handwashing Lavatory, Water Temperature, and Flow (corrected on site)
    Observation: Water from the handwashing sink in the food preparation area was measured at a temperature less than 100°F. The hot water heater under the handsink was turned off at the time of the inspection. The program manager stated that keeping the heater turned on interfers with the use of the microwave oven used to reheat prepacked frozen meals.
    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.
