The hot water heater in this facility was replaced with a residential unit that his capable of generating 17-21 recovery gallons per hour at 90°F rise.
Observed fixtures handsinks 4 prep sink 1 mop sink 1 three vat sink 1 - contact EHS within dimensions of 3 vat sink within 24 hours so that hot water demand can be calculated for replacement water heater.
Correct the above items within 24 hours. Please increase the cleaning frequency of ice machine deflector.

    Correction: Instruct staff to drink only from closed containers such as a cup with a lid and straw, handled and located to prevent contamination of hands, food and clean items.

After completing the regular/routine inspection EHS was able to locate the hot water calculation worksheet for this facility in the paper file. Based upon the installed fixtures (same as during the 2007 plan review):
1 mop sink 5 gallons
1 3 vat sink at 18x24x14 59 gallons
4 handsinks at 5 gph 20 gallons
1 pre-wash sprayer 45 gallons
total demand 129 gallons per hour
EHS provided a copy of this document to the facility. Previous instruction amended to: please provide a specification sheet for approval within 24 hours.
Optional: Note: if low-floe sprayer is installed please provide documentation of gph usage and demand calculation will be adjusted to reflect this information.

A complaint was received that stated a customer observed an employee sitting in a work table in this facility. The manager was aware of the complaint and indicated that he has spoken to the employee. EHS advised PIC to review with staff that it is not appropriate to sit on prep tables and to wash hands/change gloves after touching personal items such as cell phones.
