    Observation: A food employee stated that the 3 bay sink was being used for cleaning their hands.
    Correction: Instruct food employees to clean their hands in a handwashing lavatory. Food employees may not clean their hands in a sink used for food preparation or utensil washing.
  • Hands - Preventing Contamination from Hands*
    Observation: Employees observed handling ready-to-eat (RTE) food with their bare hands.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
  • Handwashing - Using a Handwashing Lavatory
    Observation: The hand wash sink was not useable for employee hand washing because the sink was almost completely clogged.
    Correction: A hand wash must remain readily available for hand washing at all times during food prep operations.

This inspection visit was made to assure that the homestyle refrigeration unit at this facility had either been repaired or replaced. Visit confirmed that the unit has been replaced with a new refrigerator. The food temperatures in the new unit were well within the required regulatory cold hold food temperature requirements. The non-food contact surfaces and cleanliness of the physical facility was observed to be much improved. Great job, thank you.
  • Ventilation - Mechanical Ventilation (repeated violation)
    Observation: The exhaust fan in the men's restroom is not functional.
    Correction: An exhaust fan must be provided in all restrooms. The existing fan must be repaired or replaced.

  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Foods in the Frigidaire homestyle refrigerator were observed at temperatures above the regulatory cold hold maximum temperature limit.
    Correction: The unit thermostat was adjusted down, however a follow-up inspection will take place to assure that the food temperatures are within maximum cold hold limit.
  • Cooling, Heating, and Holding Capacities
    Observation: Refrigeration equipment (a homestyle Frigidaire) was found at a temperature above that necessary to maintain cold hold food temperatures. This is an older unit and likely unable to meet the cold hold food storage demands of the establishment.
    Correction: The existing unit must be repaired and made capable of maintaining cold hold foods at the required temperatures, or it must be replaced.
  • Non-Food Contact Surfaces
    Observation: The non-food contact surfaces of equipment, i.e., refrigerator, sink, stove front, and sides of deep fry, was observed with accumulations of grime and debris.
    Correction: Non-food contact equipment surfaces must be cleaned at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Ventilation - Mechanical Ventilation
    Observation: The exhaust fan in the men's restroom is not functional.
    Correction: An exhaust fan must be provided in all restrooms. The existing fan must be repaired or replaced.

    Observation: The kitchen floor was observed very soiled with an accumulation of grease, approximately one inch thick, between the stove and deep fry unit
    Correction: The physical facilities of a food establishment must be cleaned at a frequency to preclude an accumulation of grime and debris.
