Recommend having cafe employees attend the certified food manager class. Discussed menu and possible changes. All foods prepared in the main kitchen with the exception of hot dogs that are placed on a rotating warmer. Foods are reheated in the cafe so discussed the proper reheating temperature of 165 degrees within two hours and maintaining hot holding temperature at 135 degrees or hotter. Provided fact sheet on Big 5 foodborne illnesses. Violations discussed for correction.
