    Observation: Observed heavy accumulations of dust in fan covers in walk in refrigerator holding food.
    Correction: Clean and sanitize these surfaces.
  • Critical: Equipment - Food Contact Surfaces and Utensils
    Observation: Ice machine observed with heavy build up of mildew in inner surface. Said inner panel of ice machine must be cleaned.
    Correction: Clean ice machine at a frequency to preclude accumulation of soil residues to prevent contamination of ice.

    Observation: Several mice droppings noted on floor in rear food storage area.
    Correction: Clean the floor and minimize the existence of pest in the facility. As per the operator extermination and pest control is performed every month. Operator provided report from pest control company. Close all the holes on the wall to prevent the pest from entering the facility.

    Observation: Five dead roaches observed on shelf and on glue trap.
    Correction: Remove the dead and trapped pest and minimize the harborage conditions and existence of pest in the facility.

    Observation: The prepared ready-to-eat (RTE) chipped beef, hollandaise sauce, beans in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
