    Correction: Have the license holder require employees or applicants report to the person in charge any information about their health and activities if they are diagnosed with or had a past illness from Salmonella Typhi, Shigella spp., Escherichia coli O157:H7, Hepatitis A virus or Norovirus.Reportable illnesses handouts given and discussed

    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food
  • Cloths - Wiping Cloths - Use Limitation
    Observation: Wiping cloths improperly stored between use.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking*
    Observation: The prepared ready-to-eat (RTE) foods in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: The commercially processed milk was not discarded by the ""consume by"" date.
    Correction: Discard the food at this time and ensure all previously frozen prepared or commercially processed RTE foods are served, sold or discarded by the most recent ""consume by"" date marked on the food container. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

All deficiencies noted on previous inspection report dated 9/2/15 have been corrected with the exception of refrigeration cooling capacity.
Observed the following: Provide light shield for dry storage room light, Remove rug in dry storage room, Paint exposed wood in dry storage room, Provide self closure for secondary rest-room door.
Inspection Notes: Dry storage added, Upstairs rest-room bath will serve as designated mop sink, Food purchased at Costco, Whole foods and Restaurant Depot.
Approved for permit. This report shall serve as Food Permit until establishment receives actual permit.

  • Cooling, Heating, and Holding Capacities
    Observation: The refrigerator is not sufficient in number or capacity to meet the food storage demands of the establishment.
    Correction: Provide additional refrigeration necessary to maintain food items at or below 41'F. Overstocked equipment does not allow for proper air circulation. Improper food storage temperatures are a major contributing factor to foodborne illness.

Observed the following: Provide food source - where is food purchased, What type of chicken is used for soup. schwarma and chicken and rice, Provide 50 foot candles of light in prep area, Seal wood trim around windows, Ants observed in cabinet near attic door -provide commercial pest control service, Seal wood beneath 3 basin sink, Repair and seal wall by back door, Designate a mop sink, Employee must wash hands sign needed at kitchen hand sink and rest room hand sink, Dish machine does not meet Virginia food regulation requirements - do not use for sanitizing, Provide self closing door attachment to restroom doors, Provide lid/cover for rest-room trash receptacle, Date mark prepared and stored foods, Refrigerator shall be sufficient to hold safe cold food temperatures at or below 41"F, Provide ambient air thermometer in refrigerator. Call for follow up inspection.
