The purpose of today's visit was to perform a routine assessment. Please obtain a Certified Food Manager card within 14 days. EHS provided CFM guidelines document. Please continue to train employees on safe food handling procedures such as proper hand washing, glove use, cleaning, and sanitizing practices as this contributes to a lessened risk of food-borne illness transmission. Advised to strengthen employee health policy by continually educating and training long-term employees, as such information can be forgotten. Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided). A copy of the photo identification card can be faxed to the food safety section at (703) 385-9568.

Equipment / Good Repair / Operation (corrected on site) Observation: The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: --OBSERVED FRONT DISPLAY COOLER AT 57F.
Correction: Repair/adjust the unit so it is able to maintain foods at or below 41°F. Do not use the unit to store potentially hazardous foods while it is not operating properly.--CFM CALLED FOR MAINTENANCE ON THE UNIT DURING TIME OF INSPECTION. CFM REMOVED PHF'S AND PLACED IN ANOTHER UNIT HOLDING AT 41F OR BELOW. UNIT CAME DOWN TO 40F DURING TIME OF INSPECTION.
