Employees were not able to properly wash their hands at the start of the inspection due to the water pump not being hooked up. 3. Cooler needs maintenance in order to properly function. Cooler should hold an ambient air temperature of 36-38'F in order to effectively hold foods at 41'F and below.

Complete plan review for mobile unit. Letter drafted. The following items are needed to facilitate health department approval of the plans you submitted for Tacos Chicanos mobile unit. With Regards to the Application for Foodservice Plan Review: 1. Page 2 requests that a menu be submitted with your application. Please provide a menu to enable me to conduct a more thorough plan review. 2. At least one person operating the mobile unit will need to be able to demonstrate knowledge of food safety. If the Person in Charge is certified in food safety, please submit a copy of the certificate. Otherwise, a demonstration of knowledge test will be given to determine if the Person in Charge has enough knowledge related to the types of foods being prepared and handled. 3. Ensure a thorough employee health policy is submitted. The description given in the plan review packet is vague. An example is included with this plan review letter. 4. On page 5, question 8 regarding food preparation, you stated that the produce will be washed in the kitchen sink. Please note that no food preparation is to be done inside of your home. Food preparation is to be conducted on the mobile unit only. This includes washing of produce and storing foods. In regards to the application for mobile unit permit: 1. What is the capacity of your clean water holding tank? 2. What is the capacity of your waste water holding tank? 3. Where will you be obtaining your clean water and disposing of your waste water?
