    Observation: In use open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils. Observed an employee drink stored on the clean portion of the 3-compartment sink. PIC relocated the employee drink to the break room area.
    Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles.
  • Equipment and Utensils, Air-Drying Required (corrected on site) (repeated violation)
    Observation: Several stainless steel and plastic food containers stored on the rack by the 3-compartment sink were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

Temperature logs observed during inspection. Calibration of thermometer observed during inspection.
Discussed: Ensure that continuous use equipment is cleaned and sanitized at least every 4 hours.

  • Cloths - Wiping Cloths - Use Limitation (corrected on site)
    Observation: Wiping cloths improperly stored between use. Quaternary ammonium sanitizer in wiping cloth buckets measured at 0 ppm. Corrected to 150 ppm.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The door gaskets to the sandwich prep unit and reach in freezer are in poor repair.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.
  • Equipment and Utensils, Air-Drying Required (repeated violation)
    Observation: Plastic containers were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

    Observation: Single-service or single-use articles not handled, displayed, or dispensed so that the food- or lip-contact surfaces are protected from contamination. Sundae bowls were inverted.

    Observation: Locker or other suitable facilities are not located to protect bread products from contamination. Bread products were relocated.

  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Floors in the walk in cooler (corrected) and underneath the bag in box soda system are noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Discussed the following items with the Person in Charge:
1. Updating employee health hand outs.
2. Ensure employees are washing hands for a full 20 seconds.

  • Cooling Methods (corrected on site)
    Observation: Food containers for cooling food are arranged so as not allow for maximum heat transfer. Observed several containers of chili stored stacked on top of one another with lids on.
    Correction: Arrange the food containers in the refrigeration equipment to provide maximum heat transfer through the container walls. Loosely cover or uncover the food if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.
  • Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* (corrected on site)
    Observation: According to the ""consume by"" date on the prepared ready-to-eat (RTE) chili in the refrigerator, the food should have been discarded 2 ago. Chili was dated with a discard date of 1/15/2013. Chili was discarded.
    Correction: Discard the food at this time and ensure all prepared RTE food is served, sold or discarded by the ""consume by"" date. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Temperature Measuring Devices
    Observation: The temperature measuring device in the small reach in cooler at the sundae station was not properly located in the warmest part of the unit.
    Correction: Relocate the temperature measuring device to the warmest part of the refrigeration unit to properly represent the ambient air temperature.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit observed in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a quaternary ammonium test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Trays used for hot holding appetizers were observed heavily stained and in a condition that prevents necessary maintenance and easy cleaning.
    Correction: Repair or replace the trays to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site) (repeated violation)
    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: the interior of the ice machine, the veggie dicer, the fruit wedger, and the tomato slicer.
    Correction: Clean and sanitize these surfaces for food contact.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the exterior of the trays used for hot holding appetizers, and the exterior surface of a stainless steel pan used for food storage were observed with accumulations of grime and debris.
    Correction: Clean the surfaces at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Food storage containers were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

    Observation: Observed coat hooks and bread racks stored in the same area. Observed an employee's sweatshirt hung so that it draped over the bread rack.

    Observation: The wall and floor in the area of the three compartment sink is noted in need of cleaning.
