Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Discussed the following items with the Person in Charge: 1. Updating employee health hand outs. 2. Ensure employees are washing hands for a full 20 seconds.

Observation: Food containers for cooling food are arranged so as not allow for maximum heat transfer. Observed several containers of chili stored stacked on top of one another with lids on.
Correction: Arrange the food containers in the refrigeration equipment to provide maximum heat transfer through the container walls. Loosely cover or uncover the food if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.

Observation: According to the ""consume by"" date on the prepared ready-to-eat (RTE) chili in the refrigerator, the food should have been discarded 2 ago. Chili was dated with a discard date of 1/15/2013. Chili was discarded.
Correction: Discard the food at this time and ensure all prepared RTE food is served, sold or discarded by the ""consume by"" date. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
- Temperature Measuring Devices
Observation: The temperature measuring device in the small reach in cooler at the sundae station was not properly located in the warmest part of the unit.
Correction: Relocate the temperature measuring device to the warmest part of the refrigeration unit to properly represent the ambient air temperature.

Observation: There is no properly working test kit observed in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a quaternary ammonium test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Observation: Trays used for hot holding appetizers were observed heavily stained and in a condition that prevents necessary maintenance and easy cleaning.

Observation: The nonfood contact surface of the exterior of the trays used for hot holding appetizers, and the exterior surface of a stainless steel pan used for food storage were observed with accumulations of grime and debris.
