Attn: Remai Hasan 30 Hartwood Meadows Drive Fredericksburg, VA 22406 Dear Ms. Hasan, The following items are needed to facilitate health department approval of the plans submitted for Wings to Go located at 10040 Jefferson Davis Highway, Ste #112, Fredericksburg, VA 22407. With Regards to the plans: 1. An additional handsink is required in the warewashing area. Recommend placing the handsink by the wire shelving unit by the rear entrance to the kitchen, across from the 3-compartment sink. The location of the additional handsink must be shown on the plans. 2. Switch the location of the handsink and the prep sink in the front of the kitchen. Or add an additional handsink to the prep area in the front of the kitchen. The location of the additional handsink must be shown on the plans. 3. Specification sheet for the ice machine does not specify whether or not a backflow prevention device is provided on the interior of the machine. If the machine is equipped with a backflow prevention device, please provide that information. With Regards to the plan review packet: 1. Address the type of sanitizer that will be used in the 3-compartment sink. 2. Describe the surface and location where the dumpster/grease receptacle will be stored. 3. What is the capacity of the hot water generator? Please provide the specification sheet. 4. Please provide specification sheets for the walk-in cooler, walk-in freezer, and hot water generator.
