Discussed employee health policy, dishwashing procedures, and cooling procedures. Great job on keeping a cooling log and having sanitizer test strips!
Discussed "Cooler #1" holding temperatures. Please monitor regularly to ensure unit is holding at 41 or below, and that food is held at 41 or below. You may need to consider having unit serviced to hold at a lower temperature to ensure this.
Reminder to check temperatures of food received from Dunbar Middle School to ensure it is received at 41 or below.

Facility was clean and well maintained.
  • Gloves - Use Limitation (corrected on site)
    Observation: Single-use gloves while worn during multi-tasked food preparation. Employee failed to change her gloves between washing dishes and returning to the serving line.
    Correction: Discard gloves when changing tasks and wash hands when changing from raw food to ready-to-eat (RTE) food preparation to prevent cross contamination. Single-use gloves shall be used for only one task such as working with RTE food or with raw animal food and used for no other purpose.

    Observation: There was no thermometer in the milk cooler on serving line.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Drainboards
    Observation: The drainboards/utensil racks/storage tables are not sufficient to accommodate all soiled and cleaned items.
    Correction: Provide additional drainboards/utensils racks/tables so that all cleaned and soiled utensils and equipment can be properly stored as they accumulate during operation.
  • Floor and Wall Junctures, Coved, and Enclosed or Sealed
    Observation: Floor wall juncture in kitchen under prewash sink is not coved.
    Correction: Cove floor wall juncture.
  • Critical: Toxics - Common Name/working Containers of Toxics* (corrected on site)
    Observation: Working spray bottle of Triad was mislabeled as bathroom disinfectant.
    Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.
