Observation: The person in charge failed to describe the symptoms associated with diseases that are transmissible through food. Sample employee health policy and "big 5" handout was left with the person in charge
Correction: Ensure the designated person in charge (PIC) is knowledgeable about foodborne disease prevention, Hazardous Analysis Critical Control Point principles and Regulation requirements. The PIC should be prepared to recognize conditions that may contribute to foodborne illness. The PIC must also recognize conditions that fail to comply with Regulation requirements and be authorized to take the appropriate preventive and corrective actions to ensure that the Regulations' objectives are fulfilled.
- Cloths - Wiping Cloths - Use Limitation (corrected on site)
Observation: Wiping cloths improperly used. Observed wet wiping cloth laying on the serving counter. Cloth was placed in the sanitizer bucket.
Correction: Ensure cloths used for wiping food spills are not used for any other purpose.

Observation: Consumer self-dispensing bulk food bins containing cereal are not properly labeled.
Correction: Bulk food that is available for consumer self-dispensing shall be prominently labeled with the following information in plain view of the consumer: 1. the manufacturer's or processor's label that was provided with the food or, 2. a card, sign, or other method of notification that includes the information specified in this section.
- Equipment - Non-Food Contact Surfaces and Utensils (corrected on site)
Observation: Surfaces of the coffee maker dispersion nozzle, which was in contact with a non-potentially hazardous food item (coffee) was observed soiled with accumulations of grime and debris. Nozzle was cleaned during inspection.
Correction: Clean the nozzle at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.
- Equipment - Cooking and Baking Equipment (corrected on site)
Observation: The cavity of the microwave oven is observed soiled. Microwave was cleaned during insection.
Correction: Using the manufacturer's recommended cleaning procedure, clean the microwave oven at least every 24 hours.
- Floors, Walls, and Ceilings - Cleanability
Observation: Wall or wall covering near the reach in cooler and chest freezer is not smooth and easily cleanable. It appears that these units have been moved to a different room. One of the walls near the units is an unsealed cinder block wall.
Correction: Seal or cover the wall to make it smooth and easily cleanable.

Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a chlorine sanitizer test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
- Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
Observation: The food-contact surfaces of the equipment being cleaned in the 2-compartment sink are not being sanitized. During discussions with the person in charge, it was discovered that the equipment was being washed and rinsed, but not sanitized. Person in charge was instructed in proper procedures for sanitizing equipment and handouts explaining the procedures were left.
Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.

Inspection conducted due to complaint dated 13 Jan 2014. Rooms 114, 116 and 117 were already taken out of service due to bed bugs. Room 119 was occupied. Room 211 was inspected, however no evidence of bed bugs were observed. Person in charge did admit to using "Bug Bombs" in the rooms on top of having a pest control company spray for the problem. I informed him that only a licensed pest control application person can apply chemicals to the hotel, and that he should stop using the "bombs". He stated that after using the bug bombs, all of the linen, including the mattress covers and the mattresses themselves were steam cleaned. Correction: Ensure Sanitizer Concentration is correct with appropriate test kit.

Observation: The Breakfast bar counter top is not sealed to the adjoining walls.
Correction: Seal the Breakfast bar to adjoining wall since it is exposed to spillage or seepage.

Observation: The nonfood contact surface of the Juice machine up splash and the reach in cooler door has accumulations of grime and debris.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
- Light Bulbs Protective Shielding
Observation: Light bulbs above the breakfast bar are not shielded, coated, or otherwise shatter-resistant.
Correction: Shield or replace light bulb with a coated or shatter-resistant bulb.
