Discussed cold holding with operator. It appears that the paper boats and deli paper used for portion control is hindering the cold holding of meats and cheeses. Relocate food to colder unit and remove the paper blocking the cold air.
Sewage is discharged when 3-compartment is draining into the neighboring facility. Plumber advised that they are unable to determine the source of the blockage. Water use is negatively impacting this and other facilities that are connected to the main drain line. Operator volunteered to temporarily close due to sewage back-up.
4:10p-6:30p-Sewage back-up appears to be on-going. Plumber will notify PHD if issue is resolved.

    Observation: #3910-Imminent health hazard due to sewage back-up. Building plumbing problems are causing sewage to back-up.
    Correction: Cease food service and repair plumbing.
