    Observation: There was no temperature measuring device located in the walkin freezer, the walkin cooler or the reach in drink cooler in the lobby.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Equipment - Cutting Surfaces
    Observation: The cutting board(s) along the sandwich prep line are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Lighting, Intensity
    Observation: Less than 20 foot candles of light was noted in the walkin freezer. EHS Observed light bulb was burned out in the walkin freezer.
    Correction: Provide at least 20 foot candles at a distance of 30 inches from the floor in consumer self-service areas, inside equipment, warewashing, equipment storage, toilet rooms

Establishment has been thoroughly cleaned and equipment, utensils, insert pans, etc. have been w-r-s.
All previous issues have been addressed.
All City approval has been granted.
Permit issued.

Establishment has relocated to new brand new facility.
Establishment is anticipated to open 1 November 2013. Most equipment is new, however, some will be brought over from the old location shortly before opening.
Ensure all cold holding units are maintaining at 41F or less.
Provide handwashing signage.
Provide barrier from public to prep area.
Provide sanitizer, test kit, and thermocouple.
Thoroughly clean floors, walls, and equipment.
Final inspection to be conducted 31 October 2013. Permit to be issued upon conclusion of that inspection provided that all above issues have been addressed and City approvals have been provided.
