    Observation: Lexans were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • Walls and Roofs - Exterior Walls and Roofs - Protective Barrier
    Observation: Pipes coming from water heater and over mop sink running through ceiling with gaps around piping.
    Correction: Please seal openings around all piping to discourage pests from entering cook and kitchen areas.

Great labeling and date marking observed. Procedures discussed and setup for a 4 hour TPHC, temporarily.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Prep table at end by drive-thru window observed with an internal temperature of 60 degrees. Unit was in process of being stocked, items removed to walk in and procedures set in place to use a 4 hour time as public health control procedure using time stickers if unit should need to be used prior to repair.
    Correction: Repair the prep table to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the prep table, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Employees require current Suffolk health cards. Be advised that cards generated by an online source are not accepted at this time. Ensure cards are obtained within 30 days of inspection.
Good handwashing/glove use observed.
All cold/hot holding temps monitored 3x daily (equipment and food).
Quats used as sanitizer. Test kit provided.
Chemical dishmachine WASH 120F, RINSE 120F, RESIDUAL CL 50ppm.
Employee health policy reviewed and in place. Reportable illnesses also reviewed. PIC knowledgeable.
Good date labeling observed.
Sanitizing buckets provided throughout front/back ends.
Temperature and sanitizing logs maintained daily.
Soups leftover one time only. Leftover/cooling/reheating processes reviewed. PIC advised that product is taken from hot holding unit then cooled by ice water bath to 40F within two hours. Container then labeled, covered, and placed into walk in.
All information reviewed with PIC.
