    Observation: The stainless handsink in the back kitchen area of the facility was observed rusted causing the surface to be unsmooth and porous and was not easy to clean because the component is damaged or condition is in poor repair.
    Correction: Repair or replace the handsink to provide a surface that is continuous, accessible, smooth, and easily cleaned.
  • Critical: Backflow Prevention, Air Gap* (repeated violation)
    Observation: The diameter of the air gap between the water supply inlet and the flood level rim of the three compartment sink is less than 1 inch.
    Correction: Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less that 1 inch for proper backflow prevention by the air gap.

  • Equipment - Cutting Surfaces
    Observation: The cutting board(s) along the coffee prep area are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

Pre-opening inspection notes:
- Drive thru window observed self-closing with fan.
- Filtered water through supply lines. Additionally, filtered water for hot teas and pitchers of iced tea.
- Backflow devices observed during inspection.
- Air gaps observed during inspection.
- No carbonation machine at this location.
- Top of deli case for pastries only.
- Ice machine has been washes, rinsed and sanitized prior to use.
- Equipment observe with wheels or space to provide for easy access and cleaning.
- Proper shelving observed.
- No chemicals on-site during inspection. Ensure that proper chemical testing strips are on-site prior to opening.
- Ensure that properly working thermometers are placed in all cold-holding units prior to opening.
- Ensure that all cold-holding units are washed, rinsed and sanitized prior to food storage.
- Hot water present at all sinks.
- Lights observed shielded and/or covered.
- The Suffolk Health Department needs a list of employees that will be working at this location to ensure that Food Handler cards are up-to-date per City of Suffolk Ordinance.
- Permit will be issued upon CO approval from the City of Suffolk.
