Great improvement in overall cleanliness of the facility and great efforts in maintaining cold drawers under the grills at the proper temps.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: ceiling area of the prep line noted in need of cleaning, some dust debris buildup on a/c returns, soot marks on ceiling area near fryers.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Observation: Some personnel entering the food preparation, food storage, and/or warewashing areas are not in compliance with this Regulation. City of Suffolk code requires all food employees to obtain and maintain current food handlers cards. A few employees were observed with expired food handlers cards.
    Correction: Establish a barrier to food contamination by Informing employees, delivery and maintenance persons and pesticide applicators to comply with this Regulation when entering areas of the food establishment where food and food contact items are exposed. Individuals present in areas of a food establishment where food and food contact items are exposed presents a potential contamination risk. Please ensure all current employees renew their expired cards and that any and all potential employees obtain one prior to employment.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles
    Observation: Clean plates and ladles were observed stored with the food-contact surface facing upward.
    Correction: Store equipment and utensils covered or inverted to prevent contamination while in storage.
  • Floors, Walls, and Ceilings - Cleanability
    Observation: Floor or floor covering in kitchen along the cook line was observed with two broken tiles exposing the floor below and is not smooth and easily cleanable.
    Correction: Repair or replace floor or floor covering to make it smooth and easily cleanable.

Mechanical dishmachine WASH 152F* RINSE 187F, PRESSURE 15psi. Unit fixed during inspection--> WASH 164F.
Cooling process reviewed but not observed. Good process in place as detailed by PIC.
FIFO method properly utilized.
Walk in/reach in units properly stocked as to prevent contamination.
Good handwashing/glove use/food temps by cooks observed.
All information reviewed with PIC.

Random cold/hot holding food temps taken 2x daily.
Kitchen manager knowledgeable of reportable illnesses.
Good handwashing/glove use observed.
Broken knife onserved for use. Remove. CORRECTED
Salad drawer observed to have an ambient temp of 44F. Exterior thermometer: 49F. Salad removed and placed back into walk in. Service call placed by PIC.
Excellent cooling methods in place. Cooling temps logged daily and process reviewed in detail with kitchen manager.
English common name required on exterior of multiple containers.
Personal items observed in food prep area (phone, keys, purse). Remove. CORRECTED
Wall tiles missing beneath handsink and dishwashing area. Repair to a smooth and easily cleanable surface.
Chlorine used as sanitizer. Test kit provided. Muliple sanitizing buckets provided throughout kitchen area- 100ppm.
Observed line cook take multiple final cooked temps prior to serving.
All information reviewed with PIC and kitchen manager.
