    Observation: There was one can of tomatoes, and there were two cans of green beans, with dents in the can seams, but were being stored on the rack where canned goods intended for service to customers are stored.
    Correction: Cans with dents in top, bottom, or side seams may not be used for service to customers. Cans need to be inspected, for dents in top, bottom, or side seams, immediately, when deliveries arrive, and cases are unpacked. Cans with dents in a seam need to be immediately separated from canned goods intended for service to customers. Cans with dents in seams may be stored in a special area designated for "damaged cans only" (special area designated with a sign-the sign may be hand-written), until they can be returned for reimbursement. Or they may be discarded. This violation was immediately corrected by the establishment management.

    Observation: The cook on-duty was observed contacting ready-to eat foods, with bare hands, while preparing lettuce salads.
    Correction: We do not allow bare hand contact with ready-to-eat foods. Disposable gloves, tongs, or spoons must be used. This violation was immediately corrected by the establishment management.

Cans with dents in top, bottom, or side seams need to be immediately placed in the area designated for "damaged cans only," as soon as deliveries arrive, and cases are unpacked. The damaged cans may be held for reimbursement from the supplier, or they may be discarded. This violation was immediately corrected by the establishment management.
