  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Foods were "out of temperature" on top of the cold food prep bar. Slices of Angus beef were at 60 F. Slices of ham were at 54 F.
    Correction: When a potentially hazardous food goes out of temperature, that is above 41 F, it is critical to know when that food went out of temperature. Potentially hazardous foods need to be eaten, or discarded, within four hours of going, out of temperature, or there is a risk of foodborne illness. Sliced deli-style meats are being placed in cardboard trays. That in itself is not a problem. However, these cardboard trays, containing the deli-style meats, are then being placed in pans on top of the cold food prep bar. The cold food prep bar is not capable of holding these sliced meats at 41 F, or lower, at all times, because the cardboard trays prevent the "cold air" from reaching the sliced meats. The cardboard trays introduce "air pockets." If one card board tray is stacked on top of another cardboard tray, this problem is made worse. This practice of placing cardboard trays of the deli-style meats into pans on top of the cold food prep bar needs to be discontinued, unless the restaurant elects to use "time, instead of temperature as the food safety control," as described in 12 VAC 5-421-850 of the "Food Regulations." To use "time, instead of temperature, as the food safety control," we require that the time-that each tray of sliced meats is placed on top of the cold food prep bar- be written on the outside of each cardboard tray. The sliced meats in the trays on top of the cold food prep bar, that are that are not served within four hours, must be discarded. Also, our regulations require that, if the restaurant elects to use "time as the food safety control," then the restaurant must have a written policy, explaining this, in their operating procedure manual. The slices of Angus beef that were in top of the cold food prep bar, and the deli-style ham slices that were on top of the cold food prep bar, were voluntarily discarded by the establishment management at our request. This corrected the violation.
