Observation: In the big ice machine, there was a steel bucket immersed in the ice.
Correction: A proper scoop needs to be used for this application. If an ice scoop is to be stored in the ice, the handle must always be up, out of the ice. Buckets may not be used as a substitute for a scoop. This violation was immediately corrected by the establishment management.

Observation: Foods were "out of temperature" in the walk-in refrigerator. Hot dogs were at 47 F. Bag of chocolate milk was at 47 F. Diced tomatoes were at 47 F.
Correction: When potentially hazardous food goes out of temperature, that is above 41 F, it is critical to know exactly when that food went out of temperature. Potentially hazardous foods must be eaten, or discarded, within four hours of going out of temperature, or there is a risk of foodborne illness. The walk-in refrigerator needs to be serviced/repaired so that it is again capable of holding all potentially hazardous foods at 41 F, or lower, at all times. A service call was immediately placed by the establishment management to have the problem corrected.

- Handwashing Signage/Handwashing Facilities
Observation: There was no sign at the handwashing sinks, in either of the two restrooms, stating "employees must wash hands.
Correction: We require that there be a sign at every handwashing sink that employees may use that says something to the effect of "employees must wash hands." The signs need to be installed as soon as possible. We need to do everything possible to encourage frequent, and whenever necessary handwashing.

Observation: There was a can of pineapple tid bits, and a can of crushed pineapple, with dents in a seams, but were being stored on the rack of cans designated for use with customers. Cans with dents in top, bottom, or side seams may not be used for service to customers.
Correction: Cans with dents in top, bottom, or side seams may not be used for service to customers. Cans with dents in seams need to be segregated from cans of food designated for use with customers as soon as canned goods come in to the store, and cases are unpacked. The cans with dents in seams may be stored in a specicial area, designated with a sign saying "damaged cans only." This sign can be handwritten. These cans may be stored in the specially designated area, until they can be returne for reimbursement, or they may be discarded.
