This visit was made to conduct a routine food safety evaluation. The Person in Charge was very helpful during the visit. The following issues require attention:
1. Implement an Employee Health Policy that requires all employees to know the Big 6 foodborne illnesses and all reportable symptoms and Certified Food Managers to know when to restrict or exclude sick employees
  • Critical: Employee Health Policy Requirements (corrected on site)
    Observation: Through conversation and/or review of written policy, it was determined that the establishment's employee health policy (EHP) is not compliant with the Food Code because: food employee did not know big 6 foodborne illnesses nor their symptoms.
    Correction: Create and implement an EHP that: 1) requires employees to report certain symptoms (vomiting, diarrhea, jaundice, sore throat with fever, or a lesion/infected wound) and illnesses (Norovirus, Hepatitis A, Salmonella Typhi, Salmonella, E. coli, or Shigella)

This visit was made to conduct a routine food safety evaluation. The following item requires attention:
1. Observed ground coffee and equipment stored on the clean drain board. Equipment and food items shall not be stored long term on the 3-compartment sink drainboard to provide adequate space to properly air dry equipment and utensils. Recommend relocating ground coffee and pots to a shelf away from the 3-compartment utensil washing sink.
2. Lock on the door for the ice machine room is difficult to lock. Maintaining a secure door will prevent the risk of cross contamination from consumers and the general public. Recommend replacing damaged lock to provide adequate protection of food and food contact surfaces from the general public.
  • Miscellaneous Sources of Contamination / Other Sources
    Observation: The following food item were found subject to contamination after receipt and during storage due to the condition as described:
    1. Ground coffee stored on the clean drainboard of the 3-compartment utensil washing sink
    2. Lock on door for ice machine is difficult to lock allowing general public access to ice used for mixed drinks.
    Correction: Food shall be protected from contamination that may result from a factor or source not specified under Subparts 3-301 through 3-306.
    1. Relocate ground coffee containers away from 3-compartment utensil washing sink to prevent cross contamination.
    2. Repair/replace lock to prevent access to ice by the general public.
