    Observation: Observed worker drink from open can and continue to work. Personal drinks to have lids and straws or wash hands after drinking.
    Correction: Correction was discussed with worker.

    Observation: Food is subject to environmental sources of contamination during preparation. Pan of sliced onions found on top of trash can. This is not a hygienic practice.
    Correction: Protect unpackaged food from environmental sources of contamination during preparation. PIC corrected.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Cheese at 52 F found stacked over fill line in make table.
    Correction: PIC discarded. Do not over fill.

Bacon is considered a TCS food unless it is crisply cooked. Keep it hot or cold or cook it so that it is crispy and loses most of the moisture.

    Observation: 1. bacon not crisply cooked held on counter 2. whipped topping found at 58 F. 3. Mix in back up hopper found at 46 F. 4. Shredded cheese found at 48 F.
    Correction: Maintain foods at 41 F or below. Bacon was placed in walk in. Whipped topping and mix were discarded. More ice was added to shredded cheese on line. Back up counter freezer is to be repaired. Whipped topping to be kept cold or placed onto time control. This has been a problem before.

    Observation: Insufficient sanitizer in wiping cloth bucket. (<50 ppm)
    Correction: Corrected.

    Observation: 1. Chicken found in fry basket at 72 F.Apparently, this was pulled from freezer and not needed. 2. Shredded cheese at 52 F.
    Correction: 1. PIC discarded chicken. 2. PIC added more water in ice bath so pan could be immersed.
  • Plumbing System Maintained in Good Repair
    Observation: Leak under 3-c sink. Handsink near door has low water pressure. Drain pipe under small 3-c sink has been taped.
    Correction: Repair. Remove tape from pipe.
  • Critical: Toxics - Common Name/working Containers of Toxics* (corrected on site)
    Observation: Bottle of window cleaner was misidentified as degreaser.
    Correction: Label properly.
