The School system practices time as a control for salads and sandwiches / wraps , At the end of the service period they are counted for inventory /waste and thrown out .

    Observation: >>dish machine vent hood paint blistered and peeling
    >> oven mitt torn

    Correction: restore vent hood surface over dish machine to smooth - durable - non absorbant and easily cleanable

    Observation: dish machine is not reaching required temperature for sanitizing --observed 129 after multiple runs
    Correction: dish machine per manufacturer specifications the dish machine rinse is to be > 180 . The wash cycle was 150 --- there is an appparent problem with the booster heater .
    Single service trays and as much single service product as possible is to be used -- other product is to be manually washed - rinsed and sanitized in the 3 compartment sink .
    I will be returning no later than Friday to check on temperature of unit .
    Service tech was called at the time of the inspection to service the unit --- advised manager would be out this afternoon
