  • Floors, Walls, and Ceilings - Cleanability
    Observation: Acoustic tiles in food prep area are not non-absorbent and cleanable.
    Correction: Replace with vinyl coated tiles that are non abosrbent and cleanable.

Install separate hand sink (from mop sink in restroom) - to be done this weekend. Install self-closer on restroom door. Provide metal stem food thermometer (0-220F). Paint raw wood under coffee pot. If raw egg offered in drink, must state on menu that egg is raw and have consumer advisory statement (consuming raw or undercooked eggs may increase risk of foodborne illness). Ceiling tiles should be vinyl coated (cleanable) in kitchen.
No cooking from raw. Clean and sanitize all wares/surfaces prior to opening. Permit issued. Ok to operate. Post no smoking sign.
