A minimal amount of food is hot held less than 1 hour at any given time. Observed handwashing and glove use. Discussed cleaning and sanitizing thermometer before use and every 4 hours.

Facility will open for season March 28-first week of June. Fall season from late August - late October. Suppliers: PFG, Sam's Club, Blue Bunny. No produce,milk received. No eggs served. Ground beef, chicken fillet and sausage patties are raw. Chicken fritters frozen, raw and cooked to order. Foods mainly cooked to order. No foods held over for next day service. Nacho cheese is held over in hot holding warmer with 140 degree required temperature/held for 5 days. PIC stated normally a new bag is put in daily during operational hours. No foods are offered raw, rare or undercooked. Three adults are designated as person in charge for each shift. Provided training on hand washing and general food safety including employee health. OEHS guide/Form 1 B provided.Test strips, thermometers and gloves provided. Discussed pest control. Picnic tables outsides. Walk thru initial inspection for permit renewal prior to opening on April 8. Electric fly trapper over outside door for pest control. Three site managers on tour (Mila, Cary, Sharon). Very clean establishment- floors, grill filters, walls, cooling units, etc. Recommend covered trash container in Women's bath be available. Discussed employee health and hand washing.
