This is the first operational inspection of the concession stand. Time control is used for foods. Single service utensils are used. The cheese sauce warmer and hot dog rollers along with other food contact surfaces must be washed, rinsed, and sanitized.

Observation: There is no ambient (air/water) temperature measuring device (degrees F) in the refrigerator to monitor the temperature.
Correction: Provide a temperature measuring device that is accurate within +/- 3 degrees Fahrenheit in the intended range of use.

Observation: The person in charge could not provide a food temperature measuring device.
Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.

Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Observation: The food-contact surfaces of the following equipment were not observed sanitized: pop corn scoop.
Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Acquire sanitizer and use it on all food contact surfaces

Approved for permit. The above items need to be corrected prior to use. The interior of ice machine needs to be washed, rinsed, and sanitized prior to using the ice from it. All food contact surfaces needs to be cleaned and sanitized prior to use.

Observation: Soap was not provided at the hand washing lavatory in the kitchen
Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
- Hand Drying Provision
Observation: No disposable towels were provided at the hand washing lavatory in the kitchen
Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

Observation: A sign or poster that notifies food employees to wash their hands is not provided at all lavatories used by food employees
Correction: Provide a sign or poster that notifies food employees to wash their hands at all handwashing lavatories used by food employees.

Observation: Hot / Cold water under insufficient or inadequate pressure was found to serve the following equipment:sinks
Correction: Inadequate water pressure could result in improper handwashing or equipment operation. Restore water under sufficient and adequate pressure to the sinks immediately.
- Floors, Walls, and Ceilings - Cleanability
Observation: Ceiling around the hood vent for the stove has a large opening into the attic space.
Correction: Repair ceiling to make it smooth and easily cleanable.

Observation: Floor next to the grease trap has an approximately 6 inch by 9 inch circumference and 3 inches deep. There are several groves in the floor where water can stand and is not smooth and easily cleanable.
Correction: Repair or replace floor or floor covering to make it smooth and easily cleanable.
