hot water dish machines working well sanitizing utensils at 162 degrees, all TCS food temperatures are good, when cooling items in the walk in cooler try to leave the doors open on the speed racks to allow better air flow

    Observation: seared flank steak (still raw) stored over cooked RTE food items
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.

    Observation: The food on display at the ice cream machine is not protected from contamination.
    Correction: Protect food on display by the use of packaging - counter, service line, or salad bar food guards - display cases - or other effective means to prevent contamination.
  • Critical: Time as a Public Health Control*
    Observation: No written procedures for the use of time as a public health control with potentially hazardous foods.using time instead of temperature for the items on the new salad bar because items cannot be maintained at safe temperatures
    Correction: Provide written procedures for the use of time as a public health control. The procedures must include the following steps or practices: a. Food must be marked with the time within which it must be cooked, served or discarded. b. The food is served or discarded within four hours from the time when the food is removed from temperature control c. Food in unmarked containers or packages, or for which the time expires is discarded and d. Written procedures are maintained in the food establishment and made available to the regulatory authority upon request e. Once time is implemented as a control measure for potentially hazardous food, no other measures may be substituted.

    Observation: Consumer self-dispensing bulk food bin containing dry cereals is not properly labeled.
    Correction: Bulk food that is available for consumer self-dispensing shall be prominently labeled with the following information in plain view of the consumer: 1. the manufacturer's or processor's label that was provided with the food or, 2. a card, sign, or other method of notification that includes the information specified in this section.

    Observation: Observed residues built up on the inside of the ice machines .
    Correction: Maintain food-contact surfaces of equipment clean.

All food temperatures were within the acceptable range. The dish machine was sanitizing with hot water and was working well. The quat sanitizer at the 3 basin sink was good @ 200 ppm. Firm has a written policy on reportable illnesses. Make sure all staff know what illnesses have to be reported. Staff was knowledgeable on reporting symptoms of illness but some could not state the big 5 reportable illness.
No violation noted during this evaluation.
