dish machine at the bar needs to be adjusted so the chlorine concentration is at least 25ppm
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: items in the first stand up cooler on the right cold holding at improper temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.PIC emptied unit and put items in a walk in cooler
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Chlorine sanitizing solution used was not at an acceptable concentration only at 10ppm.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. To minimize workload you can move to all single service utensils.

    Observation: Food contact surfaces of the meat slicer used to prepare potentially hazardous food items were observed soiled with accumulations of food residues.
    Correction: Clean food-contact surfaces of meat slicer no less than every 4 hours to prevent the growth microorganisms on those surfaces.

    Observation: Harborage conditions exist as there is a large number of drain flies observed at the soda gun holster.
    Correction: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces. The soda gun holster and floor drains need to be cleaned more often to help eliminate pest and the pest food sources.
