On Monday, November 23, 2015, a foodborne illness complaint was reported by e-mail. The victim claims she got sick after eating a Buffalo Sliced Chicken Sandwich and a fruit cup. I inspected the facility on the same day. I interviewed Chef and Manager Matt Lee. Mr. Lee told me that no one has complained to him. I observed employees washing hands and changing food storage covers marked for disposal. I asked Mr. Lee if he had
any of the chicken left and he said that that chicken was served from November 17-November 19. He said there was about 6 lbs. of chicken. The restaurant has no risk factors nor violations. The restaurant’s history has been very positive and employees have been trained and practice good personal hygiene. No action taken due to no grounds for action.

Vacuum packaged cheese, turkey and ham observed in walk in cooler. PIC stated product is vacuum packaged at Home Site, NOT at this facility. PIC advised by EHS to discontinue use of vacuum packaged product until process could be evaluated.

    Observation: Pork & chipotle aoili on the service line and milk in the single door refrigerator under the coffee station cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Ice down the food on the service line and adjust the milk refrigerator.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation)
    Observation: Orzo salad, potato salad, individual milk and yogurt in the display cases out front cold holding at improper temperatures
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Implement time as a public health control, or ensure the units can maintain proper food temperatures.
  • Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* (corrected on site)
    Observation: According to the date on the prepared ready-to-eat (RTE) ROP packaged salami, in the refrigerator, the food should have been discarded 1 day ago. (prepared on date 7/10/13)
    Correction: Discard the food at this time and ensure all prepared RTE food is served, sold or discarded by the ""consume by"" date. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
