    Observation: Observed pico de gallo at wait line at 60F with no time marking.
    Correction: Mark items for which time as a control is used with discard time.

    Observation: Observed in disrepair: door of salad prep unit does not form a tight seal, ice along frame of freezer door in combo unit by fryers, ice on the floor of the walk in freezer.
    Correction: Repair and maintain equipment.

    Observation: Observed bottom inside bar 4 door cooler in need of cleaning. (drink mixes, garnishes)
    Correction: Maintain nonfood-contact surfaces of equipment clean.

    Observation: Areas of worn floor tile grout.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: Observed salmon plated for service with a final internal temperature of 130F.
    Correction: Returned to cook to internal temperature of 163F. Cook all seafood to a minimum internal temperature of 145F. Use a metal stem thermometer to verify cook temperatures.
