| All food is prepared at the Rappahannock Regional Jail and transported in cambros to the juvenile center. Temperature logs are kept for using time as temperature control. Logs are in order and up to date. The center has a new sanitizer to use that is quatenary ammonium. Manufacturer directions are 200 to 400 ppm. Dishwasher is never used All dirty dishes are taken back to the Regional Jail for cleaning and sanitizing. Facility is extremely clean and well maintained. Thank you. | Discussed with Person in Charge: 1. Employee Health 2. Storage of Staff equipment 3. Out of Service Equipment: Dish machine is out of service, using three compartment sink to clean equipment. Reach in cooler is out of service and not in use. 4. Facility is very clean and staff are very knowledge with food handling procedures.
