    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

    Observation: The prepared ready-to-eat (RTE) chicken in the refrigeration unit is not properly dated for disposition.

If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: Food contact surfaces of the meat slicer used to prepare/store potentially hazardous food items were observed soiled with accumulations of food residues.
    Correction: Clean food-contact surfaces of EQUIPMENT no less than every 4 hours to prevent the growth microorganisms on those surfaces.

    Observation: The hand sinks in the ladies and mens restrooms are no longer sealed to the wall. There are several missing tiles on the wall above the 3 compartment sink.

    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.

    Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or fish filets.
    Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.

    Observation: Observed accumulation of grime and debris on the blade of the can opener. PIC removed to dish washing area to be washed, rinsed and sanitized.
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: The nonfood contact surface of the following have accumulations of grime and debris: 1) exterior of fryers 2) exterior of microwave 3) exterior of oven and grill 4) interior and exterior of all RIC's and RIF 5) bottom shelves of all prep tables are rusted
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Food stored on the floor or food stored less than 6" above the floor. Observed a bag of onions and a box of lettuce stored on the floor in the walk in cooler. Person in charge moved items to approved shelving.;Elevate food storage onto approved shelving with minimum 6" legs or casters.

    Observation: Pork Roasts noted as not being adequately cooled to prevent the growth of harmful bacteria. Observed several Pork Roasts which had been cooked on 5-7-13 , then placed in the WIC to cool around 9pm. Other foods in WIC where between 39'F-40'F. On 5-8-13 EHS observed temperature of Pork Roasts at 46'F to 50'F around 2:00pm. Person in Charge voluntarily discarded items.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.
  • Equipment - Fixed Equipment, Elevation or Sealing
    Observation: There is floor mounted Shelving in the walk in freezer and walk in cooler that is not elevated off the floor or sealed to the floor. A cleaning hazard exists.
    Correction: Alter the installation of the equipment to allow easy floor cleaning. Make 1 of the following corrections: 1. Remove the equipment 2. Install casters 3. Elevate the equipment to a minimum of 6 inches off the floor 4. Seal the equipment to the floor

    Observation: Manufacturer seasoning containers were observed reused for the storage of tartar sauce and chicken salad.

    Observation: The nonfood contact surfaces of the microwave exterior, toaster exterior, sides of the fryers and exterior of the oven have accumulations of grime and debris.
