    Observation: Potentially hazardous foods on the two salad bar self serve units were observed at temperatures above the maximum cold hold temperature for these foods.
    Correction: Potentially hazardous foods on these units were discarded.
  • Cooling, Heating, and Holding Capacities
    Observation: The two self serve cold hold units in the dining area were found to be holding potentially hazardous foods at temperatures above the regulatory maximum temperatures for those foods.
    Correction: Provide necessary equipment to maintain food items at proper cold hold temperatures. Improper food storage temperatures are a major contributing factor to foodborne illness. Another option for holding these foods would be use of time as a public health control.
  • Refuse - Storage Areas, Rooms, and Receptacles, Capacity and Availability
    Observation: A waste receptacle is not provided for disposing of paper towels near the hand wash lavatory in the serving area.
    Correction: A waste receptacle must be provided all hand wash lavatories where paper towels are provided..
  • Handwashing Cleanser - Availability
    Observation: Soap was not provided at the hand washing lavatory in food serve area.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
  • Hand Drying Provision
    Observation: Hand drying provisions were not provided at the kitchen hand wash lavatory.
    Correction: Hand drying provisions must be provided at all hand wash lavatories to encourage proper handwashing.
  • Mops - Drying Mops
    Observation: Mops not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
