Work order put in for service kitchen reach-in fridge, milk removed from unit. All logs well maintained, proper hand washing observed. Recommended for permit renewal. Permit issued.
  • Critical: Food - Potentially Hazardous Food: Cold Holding* (corrected on site)
    Observation: Milk observed cold holding at improper temperatures, milk was obvserved at 47°F, it was placed in unit before lunch, manager moved to another unit.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Reach-in refrigerator on second floor observed out of temperature, thus observed in a state of disrepair. Manager put in maintenance request for repairs for unit.
    Correction: Repair the reach-in fridge to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the reach-in fridge, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Walls and floor under equipment in second floor service kitchen noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Kitchen manager called Ecolab as soon as we realized we could not get the machine to function properly by troubleshooting. Manager states she will use paper products for dinner and breakfast unless Ecolab can make it in that night. All items in dish area were moved to triple sink to be hand washed. All logs well maintained. Reviewed testing dishwasher concentration weekly and including that in the temperature logs.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness (corrected on site)
    Observation: Chlorine sanitizing solution used was not at an acceptable concentration. Warewashing machine was observed 0ppm Cl. All dishes recently ran through machine were placed in triple sink to be washed and kitchen manager called Ecolab to come out and repair machine.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. To minimize workload you can move to all single service utensils.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the exterior of warewashing machine had accumulations of limescale and area under and around warewashing machine need to be cleaned.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: interior and dispenser of all ice machines. PIC states they will call contractor to have them taken apart and cleaned.
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Physical Facilities in Good Repair
    Observation: Hand sink in kitchen is not maintained in good repair, needs to be recaulked to wall and drywall patched around sink.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: The food contact surface of a few cutting boards are not smooth, contains cracks, chips, or pits and can not be easily cleaned. Mainly the meat and vegatable boards, PIC states she will order new ones.
    Correction: Repair or replace the cutting boards to provide a food contact surface that is smooth and easily cleanable, free of breaks, open seams, cracks, chips, pits, sharp internal angles, corners, and crevices to prevent buildup of food debris.

    Observation: Milk 49'F and butter 50'F, cold holding at improper temperatures in the refrigerator in the first floor serving area. Ambient air temperature in unit 46'F.(temperature log is showing good temepratures for today. ( Relocate PHF's and monitor unit. Do not use until food can be held at 41'F and below.)
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.

    Observation: The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: steam wells in serving area kitchens.(they are on a cleaning schedule. Manager to follow-up on cleaning)
    Correction: Maintain nonfood-contact surfaces of equipment clean.

    Observation: The recyclable refuse container is stored on absorbent material.
    Correction: All refuse containers are to be stored on smooth, nonabsorbent material that is sloped to drain.
