  • Mops - Drying Mops
    Observation: Mops and brooms not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

Proper hand washing and glove usage observed. Temperature logs and date marking well maintained. New food handler information given.
No violation noted during this evaluation.
02/10/2015Routine
Properly cooling observed. Items placed in walk-in freezer for a few mins then placed in walk-in fridge. Active temperatures being taken, proper ware washing and hand washing observed. Recommended for permit renewal. Permit issued.
  • Critical: Pests - Controlling Pests* (corrected on site) (repeated violation)
    Observation: Premises are not being routinely inspected for evidence of pests. Daily cleaning of dish room needs to be done to monitor rodent activity.
    Correction: Inspect premises on routine basis for the evidence of pests. . Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.

Spoke with kitchen manager, custodial supervisor and wood shop teacher during inspection about abating the rodent issue. Recommended adding a door sweep to dry storage door to keep rodents out and rewrapping all unused equipment in new bags. Kitchen very clean and no evidence found in cooking, prepping or serving areas. All logs maintained. New Food Code changes given and new Form 1-B issued.
  • Equipment - Cutting Surfaces
    Observation: The cutting board along the prep unit was observed scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Refuse - Using Drain Plugs
    Observation: The refuse container used to store recycbles has no drain plug.
    Correction: Replace the drain plug to the refuse container.
  • Refuse - Maintaining Refuse Areas and Enclosures
    Observation: Trash, wood piles and litter were observed adjacent to the refuse container outside the facility. Spoke with the wood shop teacher about organizing the pile of wooden pallets and with custodial staff about cleaning refuse area.
    Correction: The refuse container storage area and grounds adjacent to the container are to be maintained clean and sanitary.

    Observation: Evidence of pests observed in unused dishroom. Custodial staff and kitchen manager are aware of rodent problem and working to resolve the issue. Custodian has been cleaning and monitoring dish room and removed all droppings.
    Correction: Inspect premises on routine basis for the evidence of pests. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.
