Establishment using single service trays for serving & using the three vat sink for washing, rinsing & sanitizing of all other items used. The three vat sink was set up correctly. Adequate employee health policy in place. Health permit posted & visible.

    Observation: Outer opening of the food establishment is not protected against entry of insects and rodents.
    Correction: Protect the food establishment against the entry of insects and rodents by installing a new door sweep on the bottom of the rear exterior door to eliminate the gap.

    Correction: Reheat commercially processed RTE food for hot holding to 135°F or above.
  • Temperature Measuring Devices (corrected on site)
    Observation: There was no temperature measuring device located in the hot boxes.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

    Observation: There is no cover to the feminine napkin refuse container in the ladies room stall.
