This mobile unit cooks raw chicken to order at the shipyard. It is a self-contained unit and did not have any water for 3 compartment sink and handsink during today's operation.

    Observation: Box of single sevice items was found stored on floor.
    Correction: Store in a clean, dry location where not exposed to splash, dust, or other contamination at least 6 inches above the floor.
  • Critical: Water Capacity* (corrected on site)
    Observation: There is not a sufficient water supply to this facility for proper sanitization within this food service establishment.
    Correction: EHS is to confer with his/her supervisor for possible closure of establishment for an imminent health hazard. (See section 12 VAC 5-421-3910)
  • Critical: Handwashing Lavatory* (corrected on site)
    Observation: There was no water for hand sink, prevent routine handwashing by food workers.
    Correction: Provide water for handsinks for workers.

Please call for reinspection when violations have been corrected. Need to keep dish soap on unit also. Operator said equipment/utensils are not cleaned on unit and are taken back to restaurant. Raw chicken is handled and cooked on this unit. Since this is a "self-contained unit", sanitizer and dish soap must be kept on unit.

    Observation: There was no temperature measuring device located in freezers which are also used as refrigerators.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Temperature - Food Temperature Measuring Devices - Provided
    Observation: The person in charge could not provide a food temperature measuring device.
    Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.
  • Plumbing System Maintained in Good Repair
    Observation: There is no cold water at handsink and 3 compartment sink.
    Correction: Repair and maintain all plumbing components and fixtures.
  • Hand Drying Provision
    Observation: No disposable towels were provided on unit.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

Handsink is gravity fed. Advised that if water stream/pressure is not adequate for proper handwashing, pump may need to be installed. Operator will monitor this and install as needed. 3 compartment sink is also gravity fed from the same tank but at this time all equipment/utensils are taken back to Pollards restaurant daily for wash-rinse-sanitize. Health department permit issued.
