Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.

Observation: Drain flies were breeding on the floor at the three vat sink.
Correction: Eliminate the drain flies. Remove the white cover on the floor. Reseal or reglue it to prevent drain flies from breeding in the grease trap. Get professional help.

The purpose of this visit was to investigate complaint # 35792. Complainant ate roasted turkey BLT and allegedly got sick. The turkey is precooked, no one else got sick, 40 roasted turkey BLTs were served between 7/3/2014 & 7/7/2014. Therefore, there was no evidence to support this complaint.
