Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Observation: The food-contact surfaces of the following equipment were not observed sanitized: all equipment that went through the dishwasher
Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.

Observation: Drain flies were breeding on the floor at the three vat sink.
Correction: Eliminate the drain flies. Remove the white cover on the floor. Reseal or reglue it to prevent drain flies from breeding in the grease trap. Get professional help.

The purpose of this visit was to investigate complaint # 35792. Complainant ate roasted turkey BLT and allegedly got sick. The turkey is precooked, no one else got sick, 40 roasted turkey BLTs were served between 7/3/2014 & 7/7/2014. Therefore, there was no evidence to support this complaint. Observation: The interior surfaces of the mechanical warewashing machine are soiled with (food debris, limescale) that may decrease the effectiveness of the unit.
Correction: Increase the frequency of cleaning or limescale deposit removal from the interior surfaces of the unit to maintain unit performance.

Observation: Outer opening of the food establishment is not protected against entry of insects and rodents.
Correction: Protect the food establishment against the entry of insects and rodents by rodentproofing
the rear kitchen door.

Observation: The sink basin at the three vat sink and mop sink are slow to drain. Stagnant water breeds flying insects.
Correction: Plumbing systems and components shall be maintained in good repair. Clean out all drains.

Observation: Numerous flies in the restaurant. Observed methods are not being used to control pests
Correction: The presence of insects, shall be controlled to minimize their presence on the premises by using methods such as trapping devices or other methods as required.
