Observation: Observed turkey and ham in prep unit at 50°F. Unit was running at 56°F.
Correction: Product was discarded that had been in the unit overnight, the other products were iced. Plastic was covering compressor area and was removed. Temperature of the unit went down to 44°F and dropping.
