I recommend 100 ppm chlorine in 3rd sink. Note: Food cannot be brought from home. Tuna salad was found in a plastic container--non-commercial. PIC told me it is brought into establishment like that. Good date marking.

PIC today passed DOK. Discussed cooking eggs and bacon. Discussed cooling eggs. Discussed washing floors and where to dispose of mop water. Mop water to be disposed of in janitor's closet or toilet not in 3-c or handsink. We spoke of using type of floor cleaner that doe not utilize mop water. This is an alternative for small floor space. Do not place meats or cheeses inside plastic containers and then in the upper portion of make table. Use the lower make table to store these plastic dishes full of food. It is colder in this portion of the unit. Permit issued.

    Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.

The following to be done prior to a permit being issued:
1. 100 F water required at handsink. 110 F water required at 3-c sink
2. Provide regular bleach or quaternary ammonium test strips for tablets available (Qt-10).
3. Relocate sodas from under sewer lines.
4. Relocate toaster away from hand towel dispenser.
5. Remove paper from inside refrigerator.
6. Date mark ready to eat foods held for more than 24 hours that are TCS foods such as cooked chicken, tuna, cream cheese, hot dogs, deli meats, boiled eggs, sausage patties.
Demonstration of knowledge test to be given at 30 day visit.
--Note: Ceiling tiles to be smooth and cleanable. When existing tiles become soiled or in poor repair, they are to be replaced with smooth faced vinyl panels.
