  • Non-Food Contact Surfaces
    Observation: The nonfood contact surfaces of the bottom shelf of the reach in freezer and the storage bins where single service items such as cups and plates are stored are in need of cleaning. PIC stated she will add them to her cleaning list and will have those areas cleaned in the next few days.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Discussed with the Person in Charge:
1. Corn had been heated just prior to inspection. Some corn was removed and set aside to cool for the infant room, and the remainder was left hot holding on the stove for the older children who are served lunch a little later than the infants.
2. Facility in general very clean and well maintained.
3. Recommend using cooler water for quaternary ammonium. Water temperature measured at 100'F during today's inspection.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Floor drain under the three compartment sink and floor along the baseboards are noted in need of a detailed cleaning. Person in Charge stated she had just discussed this with the director and is planning to do it over the next few days.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
