Discussed observations with the Person in Charge. Ensure a proper backflow prevention device is provided at the mop sink. A hose bibb vacuum breaker is required when water is under constant pressure.
Overall, observed facility to be clean and in good repair.

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a quaternary ammonium test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Prohibitions (corrected on site)
    Observation: Clean equipment/utensils were found stored under the soap dispenser at the front hand sink.Person in Charge cleaned and relocated the baskets.
    Correction: Discontinue storage of clean equipment and utensils in a location subject to contamination.

    Observation: Backflow or backsiphonage prevention device not available on threaded faucet as required by law. Observed hose with nozzle attached to the mop sink.

    Observation: Containers of bleach and drain cleaner are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. Observed chemicals stored among bottles of oil and vinegar.
    Correction: Containers of cleaning chemicals must be located in an area that is not above food, equipment, utensils, linens or single service items.

Overall observed facility to be clean and in good repair.
Discussed sanitizing of food storage containers with the Person in Charge. Ensure all portions of the containers have adequate contact time with sanitizer in order to be properly sanitized.

  • Cloths - Wiping Cloths - Use Limitation (corrected on site)
    Observation: Wiping cloths improperly stored between use. Observed wet wiping cloth stored on stainless steel ledge located under the cutting boards on the sandwich prep line.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Equipment - Non-Food Contact Surfaces and Utensils (corrected on site)
    Observation: Surfaces of the soda nozzles were observed soiled with accumulations of grime and debris.
    Correction: Clean the surfaces of the soda nozzles at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.
  • Equipment and Utensils, Air-Drying Required (corrected on site)
    Observation: Several food storage containers were observed stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

    Observation: Backflow or backsiphonage prevention device not available on threaded faucet as required by law. Observed hose used for cleaning floors with a nozzle attached to the end. The hose did not have a hose bibb vacuum breaker attached at the faucet.

1. Quaternary ammonium sanitizer measured at approximately 300 parts per million.
2. Ensure hands are washed thoroughly and frequently when working with food.
3. Minimal food preparation observed during today's inspection.
Facility in general appears very clean and well maintained. Thank you!

  • Thawing (corrected on site)
    Observation: Improper methods used to thaw egg patties and steak cubes. Observed egg patties and steak cubes thawing at room temperature. Egg patties were relocated to the walk in cooler and the steak cubes were placed in the 3-compartment sink under cold running water.
    Correction: Thaw potentially hazardous foods by either of the following methods: 1. Under refrigeration that maintains food temperature at 41°F (45°F) 2. Completely submerged under running water at a temperature of 70°F or below with sufficient water velocity to agitate and float off loose particles in an overflow. Ready-to-eat food shall not exceed 41°F and raw animal foods shall not exceed 41°F for more than four hours 3. As part of the cooking process

    Observation: The ambient air temperature measuring device (degrees F) located in the reach in cooler under the toaster is no longer accurate. Thermometer is broken.
    Correction: Provide a temperature measuring device that is accurate within +/- 3 degrees Fahrenheit in the intended range of use.

    Observation: Observed employee belongings, such as a set of ear buds, apron and backpack, stored on shelving units with food items.
    Correction: Designate an area for employees to store personal belongings that is not next to food or equipment.
