Observation: Milk cold holding at improper temperatures in the milk cooler closest to the dish washing room.
Correction: Move milk to another cooler that can maintain 41 degrees or less. Discard the food that has been out of temperature for more than two hours and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.

Correction: Inspect premises on routine basis for the evidence of pests. . Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces. If evidence found, report to the pest control company being used to increase efforts to resolve.

The Delfield reach-in was not operating properly at the time of inspection, but a work order was already submitted and food staged in the unit for lunch only then emptied until it is repaired.

Observation: A food employee failed to wash his or her hands before engaging in food preparation after handling soiled utensils which may have contaminated his/her hands.
Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.
